- Clean beans, and remove stones.
- Rinse in strainer.
- Soak beans overnight in water covering beans by 2–3 inches. Drain.
- Place water, beans, and onion in large stockpot. Bring to boil, partially cover, and simmer until tender — roughly 90 minutes. Add water if needed.
- When finished, drain majority of liquid, keeping beans in pan. Discard or keep onion in, your choice.
- Add seasonings.
- On medium heat, mash with potato masher to desired consistency.
- Simmer, partially covered for 10–15 minutes, stirring occasionally. Turn off heat, add olive oil, and stir.
- (optional) Top or serve with diced onion, chopped cilantro, diced radishes, chopped cabbage, diced tomatoes, and Tomatillo Salsa.
- Serve and enjoy!
